Beef Processing
The beef animal is broken down into sides. A side is one-half of a that has been split lengthwise from the neck to the tail. The side can then be split into the front quarter and hind quarter.
Hog
Pork Processing
The side of pork is broken down into sub-primals from the four primals: pork shoulder, pork leg, pork loin, and pork belly.
Young Sheep
Lamb Processing
The lamb carcass is broken into four primals: front, leg, loin, and flank. The lamb front is then broken into four sub-primals: the lab shoulder, neck, fore shank, and breast.
Venison
Deer Processing
We are offering deer processing for the fall/winter season. We will be processing deer during REGULAR business hours Mon-Sat 8 am – 6 pm, unless noted otherwise on our social media sites with “special hours” or until we have reached capacity for the day!
